In July of this year, we had the pleasure of joining a number of other pasture-based farmers in a nutrient testing project sponsored by Mother Earth News. We submitted samples of our Black Bresse eggs and Sulmtaler chicken thighs to ANRESCO in San Francisco, an independent testing lab. We now have the results of those tests, which were focused on an analysis of fatty acids, specifically looking at Omega-6s and Omega-3s. In short, when you buy Sunbird Farms pastured eggs and poultry, not only are you supporting the preservation of heritage breeds; more sustainable, bio-diverse farming; and better tasting food; but you can be sure that what your eating is proven healthier for you and your family.
The most important aspect of Omega-6s and Omega-3s is not just that they are present in our food in sufficient quantities, but that their ratio is in a healthy range; the lower the ratio the better. Conventional eggs average a ratio of about 15:1, Omega-6s to Omega-3s. Sunbird Farms pastured eggs have a ratio of about 6:1, having almost 6x more Omega-3s than conventional eggs. Our pastured-poultry has a ratio of 7:1, which is more than twice as healthy as conventional poultry.
