Friends, recently our family acquired some additional property and we will be launching a premium pork project (a lot of P’s) with delivery next summer. For years, my brother at Valley Fog Farms has been raising top-shelf pork for our family and friends. Now you have a chance to secure some of this premium pork for your family too. This is really going to be an exciting effort.
The Perfect Blend
Recently we began working with a local breeder using a Kune Kune/Old Spot cross. The Kune Kune is from New Zealand and the only pig that can truly live entirely off of pasture. They mature more slowly, which results in a beautiful marbling of fat, ideal for charcuterie. Their pasture prowess ensures a healthier pig and healthier pork.
The Old Spot is a UK breed and one of the oldest registered breeds in the world. They are excellent grazers and foragers and renowned for their flavor. They are ideally suited for an outdoor environment, and their meat is top quality, perfectly suited for all purposes. This is a fantastic cross.
We plan to raise them fully outdoors, on pasture so they can run and rut and express their divine “pigness.” We will supplement with a curated blend of entirely local feed, including organic grains (soy-free), Ashley walnuts from our own heirloom orchard, fruit and vegetable windfall from our gardens and a sillage made from palm dates. This combination will make for a truly unique, localized flavor profile that is as tasty as it is nutritious.
Our plan is to sell packages that will range from 25-30lbs and include ham roast, shoulder roast, bacon, chops, sausage and stew meat of the highest flavor and quality. These packages will be $165ea. and will be seasoned and smoked by a local butcher. Pork of this quality is extremely hard to come by, and often much more expensive. For a truly unique experience, we will also have 1/4’s and 1/2’s available upon request, which will allow you to customize your cuts and your curing.
